Am allowed to eat e.g. Peppers, Carrots, Broccoli, Beans, Mushrooms...
I love these kinds of commitment device markets, but I wouldn't make the time frame that long. It's only about a week. I assume that the market is related to a goal of wanting to eat healthier, right? The way you set up the market makes it seem like you're not willing to make a commitment right now, like you want to postpone your goal. It's only a week, but the time frame is a whole year. Basically, this market doesn't seem to be about a commitment, but about whether you'll be interested and willing to make this commitment in the future.
I'm vegan, but even I would recommend against a 100% pure vegetable diet, with zero carbs, zero fruit, zero plant fats/oils, zero vitamin B12 / omega-3 (via supplements / fortified foods), and only one plant protein source (beans). Note that none of these missing things absolutely require meat, eggs, dairy etc. Unless you have a medical reason to cut so much out, you'll probably just damage your health while feeling like shit. @TheAllMemeingEye I only want to do it for a week not anytime longer, but I meant to include things like nuts and supplements and fruit. Maybe I'll N/A this and create a second market with a better description.
